Veggies:

Ginger and Garlic Bok Choy
  • 1 tablespoon grapeseed oil
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger
  • 8 cups chopped fresh bok choy 
  • 2 tablespoons reduced-sodium soy sauce
Heat oil in a large skillet over medium heat. Add garlic and ginger and cook 1 minute. Add bok choy and soy sauce cook 3 to 5 minutes, until greens are wilted and stalks are crisp-tender. 


Veggie Stir Fry
  • 1 tbsp grapeseed oil (I use Wildtree Garlic Grapeseed Oil)
  • 3 peppers chopped
  • 1 pint mushrooms 
  • 1/2 bag baby carrots chopped
  • 1 bunch asparagus chopped
  • 1 cup green beans chopped
  • 1 tbsp seasoning mix of choice (I use Trader Joe's 21 Seasoning Mix or Wildtree's Opa! Greek Seasoning)
Heat oil in large skillet over medium heat. Combine all veggies and seasoning. Cook veggies in skillet, mixing frequently until tender. Add garlic or ginger if you'd like!
